Food Review: Montreal-Style Smoked Meat (Canadian)

According to Wiki, the Montreal-Style Smoked Meat is a type of kosher-style deli meat product made by salting and curing beef brisket with spices. The brisket is allowed to absorb the flavors over a week, and is then hot smoked to cook through, and finally steamed to completion.

So, obviously, the secret is in the spices used – the seasoning, the curing. Coriander. Garlic. Mustard seeds. Sugar. What else?

Then again and looking closely, the brisket has a lot to do with the quality of your smoked beef, in this case, it’s Montreal. Every other mixture or supplemental ingredient only enhances the beef’s flavor..

Hmm… Canada must be blessed with good cattle.
